Norwegian baking in harmony with the seasons: Norwegian baking tradition is shaped by a close connection to nature, the changing seasons, and artisanal craftsmanship. In this baking book, the award-winning food blogger Nevada Berg, who lives on a farm in rural Norway, presents a personal selection of her favorite sweet and savory baking recipes.

The collection ranges from rustic breads and juicy berry cakes to delicate Christmas baking. Traditional classics meet modern interpretations, such as an almond tart with nettle cream, oregano bread with wild blueberries, juniper rolls, a Viking pizza with wild strawberries, or an apple cake with gin caramel. Of course, lefse, the traditional Norwegian flatbread, is also included.

The 90 recipes follow the rhythm of nature and make use of the ingredients each season has to offer. The result is a baking book that goes beyond recipes to convey a way of life that is close to nature, unhurried, and deeply connected to the Nordic landscape.

For everyone who wants to explore Nordic baking culture and values natural ingredients, seasonal cooking, and authentic recipes: atmospheric photography accompanies the recipes and captures Norway’s distinctive light, from the midnight sun to the clear winter light. The result is a baking book that brings together culinary enjoyment, landscape, seasons, and Nordic baking culture.

Nevada Berg

Nevada Berg is the author of the award-winning food blog North Wild Kitchen, where she shares authentic Norwegian food culture with a global audience. Originally from the United States, she now lives with her family on a farm in Numedal, Norway, where the landscape, daily life, and local traditions shape her cooking. Her first cookbook, North Wild Kitchen, was published in 2018 and recognized by The New York Times. In her new baking book, Nevada explores the recipes that have been part of Norwegian life for generations: fragrant pastries, classic breads, and seasonal specialties inspired by the shifting Nordic light and nature. She blends traditional knowledge with modern influences and reveals how closely baking, culture, and memory are connected. Her work invites readers to experience Norwegian cuisine with all their senses and bring the warmth of these traditions into their own everyday lives.
